Pull a tin of these delightfully light crisp oat cookies out of the freezer when a bunch of hungry farmhands show up on your doorstep.

* 1 cup margarine
* 1 1/2 cups brown sugar
* 1 tsp vanilla
* 1 egg
* 1 1/4 cups rolled oats
* 1 cup coconut
* 1 1/2 cups flour
* 1/4 tsp baking soda
* 1/4 tsp salt
* 2 tsp baking powder

Cream together sugar and butter, and wet ingredients. Gradually add the dry ingredients. Spoon 1 heaping teaspoon for each cookie onto a prepared cookie sheet. Cook at 375 degrees for ten minutes.
